Yogiji’s beets a la Roger Drummer
This recipe is originally from Yogi Bhajan, and required pearl onions. Roger was given the original recipe in person from Yogiji during a personal consultation, and told to eat the dish for all meals, everyday, for 40 days, which he did! The beets help cleanse the liver and build blood. It’s a really good vegetarian dish, because we still eat it, with this modified version.
Ingredients:
Ghee
Jalapeño
Beets
Yukon Gold potatoes
Spanish onions
- Sautee 2 onions, chopped, in 4 T. ghee and one jalapeño, chopped, on low to medium heat
- Boil, or bake 6 medium sized Yukon gold potatoes, chopped, then add to the ghee mix
- Prepare beets by boiling with skins left on, until soft, 4 large beets, chopped, cover in water and boil until soft., then add to the ghee mix with the water from the beets
- Stir and cook all ingredients together for 30 minutes, stir often to break up potatoes, on medium heat, salt to taste
